Spring has sprung, and cottage food producers and food trucks are springing to life in preparation for the upcoming farmers market and festival season.

It’s no secret that sales for these businesses spike significantly during the summer months. Food truck owners typically report earning 25%–30% of their annual revenue during this peak with some seeing as much as 60%. Home cottage food producers experience a similar surge as they hit the markets, with many reporting an average yearly income of $30,000. Driven by today’s economy and growing local support, this upward trend shows no signs of slowing down.

If you’re looking to bring Grandma’s famous loaf of bread to the masses or share your signature fish tacos and homemade tamales with the community, there is a lot to manage. Let’s dive into what you need to know to get started and explore how a Virtual Assistant can help you handle the heat.

All the best,

Spring into Success: Is a Virtual Assistant Your Secret Ingredient?

Let’s address cottage foods first since they are less regulated than food trucks which I will address in a future newsletter.

Cottage food production is in a major “boom” phase. If you’re an entrepreneur entering this space, you need to know how to protect your business—and how a Virtual Assistant can help you scale.

What is Cottage Food?

It’s straightforward: food produced in a home kitchen rather than a commercial one. Whether it’s gourmet cookies, artisan breads, or candies, these makers sell directly to consumers via shipping, farmers’ markets, or local pickup.

Is it Legal?

Absolutely. However, having served as a Quality Assurance Superintendent for a frozen food plant for a decade, I’ll admit I initially had raised eyebrows. My job was to “cover our butts” regarding food safety, working closely with the USDA and FDA. So, I dug into the data. Here is what I found:

50-State Legality: Every state has laws pertaining to cottage food, but the rules vary wildly.

The Fine Print: States set their own rules on kitchen conditions, permits, labeling requirements, and annual income caps.

The “Pet” Factor: Some states (like OR and NC) require pet-free kitchens. Others, like my home state of Texas, don’t explicitly forbid it but strongly advise against it.

Evolving Rules: Many states are currently widening their laws, raising income caps, or allowing “perishables” that require strict temperature control documentation.

Professional Standards: Even at home, it is best practice to maintain SOPs (Standard Operating Procedures) and GMPs (Good Manufacturing Practices). If you manufacture a consumable, you need a paper trail.

How a Virtual Assistant Can Help

A VA with food manufacturing experience—like myself—can “cover your behind” while you focus on the baking. Your VA should:

  • Research Critical Control Points: Set up GMPs and record sheets to track safety checks.
  • Draft SOPs: Create step-by-step guides to keep your product consistent as you grow.
  • Manage Compliance: Navigate USDA, FDA, and FSIS regulations to ensure your labels are legal and your traceability is airtight.
  • Scale the Business: Handle social media marketing, manage DMs, design graphics, and organize your bookkeeping.

I’m a huge fan of cottage producers! For my husband’s birthday, I ordered this Peanuts-themed cake from BB’s Baked Goods here in Cameron. It looked incredible and tasted even better.

I love Wavebox browser

I Must Really Like The Wavebox.io Browser Julie Mathews Virtual Assistant Aug 4, 2026Issue No: 10 I was advocating for using Chrome tabs, tab groups and bookmark organization not too long ago to keep browser clutter down. But now, the Wavebox.io browser has become my default browser. I was overwhelmed when I first tried to use it, but now I use it all of the time. Wavebox solved two problems for me. It was hard for me to see and read tabs, grouped tabs, and saves time from opening windows and...

Drowning In Social

Permission To Quit A Social Platform Julie Mathews Virtual Assistant July 22, 2026Issue No: 9 If you have been feeling guilty about not posting on every platform, I am giving you permission to let one go, maybe even two. I get it, and here is what I'm learning. There are a couple platforms I really don't care for. However, when researching my target markets, I found that they use those two platforms quite regularly. Chomping at the bit, I activated accounts. Ooops. I have three platforms that...

Your Ingredient List Might Be In The Wrong Order Julie Mathews Virtual Assistant July 11, 2026Issue No: 8 It's Easy To Get Tripped Up Quick question. I’ll gear this towards human food since it’s more relatable than talking pet food, however, this applies to any food consumed by people or animals. Here’s your question: If your jam recipe calls for 2 cups of sugar and 1 pound of strawberries, which ingredient goes first on your label? If you said sugar because it comes first in your recipe, you...
